No trip to Kailua is complete without stopping by Agnes’ Portuguese Bake Shop to pick up a loaf of their amazing sweet bread, a box filled with assorted pastries, or of course to sample their award winning, made-to-order hot Malassadas. In this video, go on location in Kailua, to visit with Lon, Agnes’ owner, as he demonstrates how to create their signature sweet bread pudding recipe.
(1) Prepare:
This bread pudding will need to cool for at least an hour once it comes out of the oven, so make sure you allow enough time before serving.
- Gather tools: Large bowl, 9″ X 13″ baking pan, larger pan for water bath, 2 large mixing bowls, whisk, mixing spoon, and bread knife, measuring cups and spoons.
(2) Prep bread:
One loaf of Agnes’ Sweet bread cut into 1-2 inch cubes
(3) In a separate bowl, combine remaining ingredients:
2 cups evaporated milk
2 cups water
1 cup sugar
1 cup fresh whole eggs
2 tbsp. cinnamon
2 tsp. fresh ground ginger
1 tsp. nutmeg
1/2 tsp. salt
Whisk ingredients together until the sugar is completely dissolved. Then add:
1 1/2 cups raisins
3/4 cup macaroon coconut
3/4 cup apples (peeled, cored, and chopped)
1/4 cup melted butter (drizzled over the ingredients)
Cubed bread
Mix well but do not over stir. Keep some of the consistency of the bread cubes. Allow the mixture to sit for about 15 minutes to combine flavors.
(4) Pour into a greased 9″ x 13″ pan:
Distribute the mixture evenly with your mixing spoon throughout the pan. You’re trying to get a uniform thickness so remember to work the mixture into the corners as well. Spread brown sugar (approximately 1/4 to 1/2 cup) evenly over the top of the bread pudding.
(5) Place the 9″ x 13″ pan into a larger pan suitable in size to function as a water bath:
Fill the outer water bath pan with water until it reaches approximately half way up the side of the pan containing the bread pudding mixture. Do not over-fill the water bath.
(6) Bake 50-60 minutes at 375 degrees:
Bake until the pudding has puffed a little and springs back to the touch. Remove carefully from the oven and allow to cool before cutting and serving.
